Today we are going to surprise you with an eastern vegan recipe. Vegan lentils stew. It’s an amazing meal full of useful nutritions. It can be prepared in less than 30 minutes.
Here are the ingredients:
1.one medium yellow onion
2.1cup dry green lentils
3.1cup pumpkin pure
4.1tbsp olive oil
5.1tsp salt, pepper and turmeric
Cook the lentils in 2cups of boiling water for 20 minutes
Add the puree into the boiling lentils and mix it with spoon.
Chop the onion into small cubes and fry it in oil. After they are completely fried add your spices and fry them with the onion.
Add fried onions in to the lentils and pumpkin mix and cook them for about 5-10 minutes.
You can serve your meal with fresh lime and olive oil.

Add salt after the lentils are completely cooked. salt prevents legumes from cooking. some lentils may take more time to be fully cooked so make sure yours is fully cooked.
